Domaine William Fèvre is one of the defining estates of Chablis, with family winegrowing roots in the region stretching back for generations. William Fèvre took control of the family domaine in 1959 and steadily assembled an exceptional portfolio of Premier Cru and Grand Cru vineyards, giving the estate one of the strongest collections of sites in Chablis.

The domaine became particularly respected for a style that combines concentration with transparency. Didier Séguier has played a major role in shaping that modern identity, favouring hand harvesting, gentle gravity handling, restrained use of older oak and long élevage so that individual vineyards remain clearly recognisable.

Environmental work has become equally important. The domaine spent many years farming organically before entering formal organic conversion, with biodynamic practices also used in top vineyard parcels. Since 2024, William Fèvre has been part of Domaines Barons de Rothschild Lafite.

For customers, Les Preuses represents the more refined side of the estate’s Grand Cru range. It has depth and longevity, but its real appeal lies in perfume, finesse and that long, salty Chablis finish.

The 2021 Les Preuses is made from 100% Chardonnay. Domaine William Fèvre owns around 2.5 hectares within the Grand Cru, split between two different sectors: one lower on the slope with a south-easterly exposure and another higher on the plateau. This combination gives the wine both ripeness and the cool mineral tension associated with Les Preuses.

The difficult 2021 season was shaped by severe spring frost and cooler, wetter conditions than many preceding vintages. Harvest was correspondingly later, producing a smaller crop with bright acidity, modest alcohol and particularly classical Chablis freshness.

The grapes are hand harvested and handled gently, with gravity used to avoid unnecessary pumping. Pneumatic pressing lasts around 1.5 to 2 hours, followed by light settling. Around 50 to 60% of the cuvée is vinified in older French oak barrels, with the remainder in small stainless-steel tanks. Ageing lasts around 14 to 15 months, including approximately five to six months on fine lees in barrel before maturation is completed in stainless steel.

The result is a Grand Cru that is already beautifully expressive but still youthful. Grapefruit, pear, white flowers and wet stone lead into a silky palate with vivid acidity and a long saline finish. The oak brings texture rather than flavour, allowing the vineyard’s finesse to remain clear. It can be enjoyed now with air and fine seafood, but this is especially attractive for customers prepared to cellar it and watch its mineral complexity deepen.
