Tense, mineral and beautifully classical, this 2021 Montmains shows the cooler, more chiselled side of Premier Cru Chablis. Green apple, lemon oil and grapefruit sit alongside white flowers, flint and a cool marine note, with the Kimmeridgian soils giving the wine a distinctly stony edge. The difficult 2021 season produced a smaller crop, but the resulting wine has striking freshness, precision and energy.

On the palate, it is satiny yet racy, with citrus, white peach and green plum carried by bright acidity and a long saline finish. Seasoned oak adds texture without obvious flavour, allowing the vineyard’s mineral character to stay firmly in focus. This is a strong buy for customers who want serious, age-worthy Chablis with concentration, tension and the freshness to work brilliantly with seafood.

Montmains lies on the left bank of the Serein and includes the neighbouring sectors of Forêts and Butteaux. William Fèvre blends parcels across all three, bringing together the weight of Montmains, the mineral drive of Forêts and the firmer tension associated with Butteaux. The result is one of the domaine’s most structured and age-worthy Premier Cru expressions.

Domaine William Fèvre is one of the benchmark names of Chablis, with family roots in the region stretching back for generations. William Fèvre took control of the domaine in 1959 and steadily expanded its vineyard holdings, building one of the strongest collections of Premier Cru and Grand Cru sites in the appellation.

The modern style has been shaped by Didier Séguier, who has long focused on gentle handling, restrained oak and extended élevage so that individual vineyards remain clearly recognisable. Rather than chasing richness, the wines are built around freshness, mineral precision and the differences between Chablis’s varied Kimmeridgian slopes.

Environmental work has become equally important. The domaine had been farming organically for many years before entering formal organic conversion, with biodynamic principles also used in selected top parcels. Since 2024, William Fèvre has been part of Domaines Barons de Rothschild Lafite.

For customers, Montmains is an especially appealing Premier Cru because it offers more concentration and structure than village Chablis while keeping the steely freshness and salinity that define the region.

The 2021 Montmains is made from 100% Chardonnay. Domaine William Fèvre works around 3.8 hectares across ten parcels within Montmains and its neighbouring sectors of Forêts and Butteaux on the left bank of the Serein. Exposures range from south-east to north-east, while the soils are classic Kimmeridgian marl, rich in clay and limestone.

The 2021 growing season was exceptionally challenging. An early spring was followed by severe April frosts, with temperatures dropping as low as -8°C and dramatically reducing yields. A cooler, wetter summer slowed ripening, with harvest beginning around the third week of September. The surviving fruit retained high acidity and produced a particularly classical, mineral style of Chablis.

The grapes are gently pneumatic pressed, followed by alcoholic and malolactic fermentation in stainless steel. Ageing lasts around 18 to 20 months on fine lees, with approximately 30% of the wine matured in seasoned French oak barrels around three to four years old and the remainder kept in stainless steel. The components are then blended and returned to tank before bottling. Alcohol is 12.5%.

Now with a little bottle age, the wine shows green apple, lemon, white peach and flinty mineral notes, with a satin texture and a long saline finish. The seasoned oak brings shape rather than flavour, while the cool vintage keeps the wine particularly fresh and focused. It is drinking well now with seafood, but its acidity and mineral concentration give it enough structure to continue developing.
