Fine, floral and quietly mineral, Beauroy shows the gentler, more graceful side of Premier Cru Chablis. Green apple, lemon and orange zest sit alongside white flowers, oyster shell and a subtle chalky note, with the cooler 2021 vintage giving the wine a particularly pure, classical feel. There is ripeness here, but freshness remains firmly in charge.

On the palate, it is satiny, energetic and finely balanced, with citrus, orchard fruit and a long saline finish. A small proportion of French oak adds texture rather than obvious flavour, while the long élevage brings polish and composure. This is a strong buy for customers who want serious Chablis with finesse, mineral character and enough depth to stand comfortably beside richer seafood or poultry dishes.

Beauroy sits on the left bank of the Serein and is one of Chablis’s classic Premier Cru sites. Domaine William Fèvre is one of the benchmark estates of Chablis, with family roots in the region stretching back for more than two centuries. William Fèvre took control of the domaine in 1959 and steadily assembled an exceptional collection of vineyards across the appellation, including important holdings at Premier Cru and Grand Cru level.

The estate is known for a style that prioritises terroir, freshness and precision. Didier Séguier has played a central role in the modern direction, favouring gentle grape handling, restrained use of oak and long élevage rather than overt winemaking signatures. That approach allows the mineral differences between each climat to remain clear.

Environmental work has also become an important part of the domaine’s identity. Organic practices were introduced long before formal conversion began, with the estate progressively moving towards certified organic viticulture. Since 2024, Domaine William Fèvre has been part of Domaines Barons de Rothschild Lafite.

For customers, Beauroy is a particularly appealing entry into the Premier Cru range: elegant, saline and serious, but less imposing than the grands crus.

The 2021 Beauroy is made from 100% Chardonnay. Domaine William Fèvre farms 1.12 hectares within the Troësmes sector of Beauroy, with south and south-east exposure. The soils are clay-limestone over classic Kimmeridgian geology, rich in marl and marine fossils, giving the wine its characteristic mineral and saline profile.

The 2021 growing season was difficult and classically cool. Early budbreak was followed by severe April frosts, with 17 nights below zero between 3 and 24 April. June warmth helped the vines recover, but prolonged summer rain slowed ripening. Harvest began on 17 September, significantly later than in several preceding vintages, producing a small crop with bright acidity and clear regional character.

The grapes are handled by gravity to avoid pumping, followed by gentle pneumatic pressing for around 1.5 to 2 hours. Very light settling retains fine lees, allowing alcoholic and malolactic fermentations to occur naturally. Vinification takes place in stainless steel. Ageing lasts 18 months, with 25% of the blend spending five to six months on fine lees in French oak barrels before maturation is completed in small stainless-steel tanks. Alcohol is 12.5%.

The result is a Chablis Premier Cru that feels fresh, floral and precise, with green apple, citrus and oyster-shell salinity carried by a smooth, finely textured palate. The restrained oak adds shape without masking the vineyard, while the cooler vintage gives the wine excellent energy. It is ready to drink now with seafood or poultry, but the acidity and mineral structure should allow further development.
