Domaine William Fèvre is one of the benchmark names of Chablis, with family roots in the region stretching back for centuries. William Fèvre took control of the estate in 1959 and built its modern reputation through the acquisition of exceptional Premier Cru and Grand Cru parcels, creating one of the most important vineyard holdings in the appellation.

The domaine now works around 70 hectares, with especially significant holdings in Chablis’s greatest sites. Didier Séguier has shaped the wines for decades, developing a style based on gentle handling, restrained oak and a clear expression of each vineyard. Environmental work has been equally important, with organic practices introduced across significant parts of the estate and biodynamic methods adopted for Premier and Grand Cru parcels.

Since 2024, the domaine has been part of Domaines Barons de Rothschild Lafite. For customers, the attraction remains reassuringly Chablisien: Chardonnay, Kimmeridgian terroir, precision and longevity. Bougros is one of the estate’s more powerful Grand Crus, offering richness without losing the mineral freshness that defines William Fèvre.

The 2018 Bougros is made from 100% Chardonnay. Domaine William Fèvre’s holding covers 6.23 hectares, around 49% of the entire Bougros Grand Cru appellation. The vines sit between approximately 130 and 170 metres above sea level with a south-westerly exposure, planted on deep marl and clay soils.

The 2018 growing season began with a wet January and cold, dry February before warm spring weather encouraged rapid growth and an even flowering. Summer was hot and sunny, with useful August rainfall supporting final ripening. Harvest began on 3 September, bringing generous yields of golden, fully mature grapes.

The fruit is handled by gravity without pumping, followed by gentle pneumatic pressing for around 1.5 to 2 hours and light settling. Fermentation takes place in small stainless-steel tanks. The wine is aged for 19 months, with 30% of the blend spending time in French oak barrels, including six months on fine lees, before final ageing in small stainless-steel tanks. Alcohol is 13%, residual sugar is 0.2 g/L and the wine is bottled under DIAM.

Now with beautiful maturity, the wine shows ripe pear, citrus and yellow orchard fruit alongside integrated oak, flint and a long saline finish. It still has the depth and structure of Bougros, but bottle age has made the palate more harmonious, savoury and immediately rewarding. It is drinking superbly now with richer seafood or poultry, while the acidity and mineral core suggest there is still plenty of life ahead.
