2025 'The Falcon' Sauvignon Blanc, Lake Chalice

Passionfruit, green gooseberry and lemon leap from the glass, joined by blackcurrant bud, fresh herbs and a subtle flinty edge. Bright and expressive without becoming loud, this is Marlborough Sauvignon with an energetic personality and plenty of aromatic detail.

The palate is dry, crisp and beautifully focused, combining ripe tropical fruit with crunchy citrus acidity and a clean mineral finish. There is enough generosity to make it instantly appealing, but the herbal lift and stony definition keep every sip fresh. A polished, dependable Sauvignon Blanc that offers far more character than the everyday crowd.

Lake Chalice has been part of Marlborough’s wine story since 1989. The Falcon is its signature range, named after New Zealand’s native kārearea falcon. This Sauvignon Blanc draws its character from mature vines in Dillon’s Point, where fertile silty loam produces generous fruit while retaining the freshness and aromatic intensity that define the best wines from the Lower Wairau Valley.

Established in 1989, Lake Chalice is a long-standing Marlborough producer with a clear focus on vineyard character, regional expression and highly drinkable wines. Since 2015, the estate has been owned by the Ibbotson family, whose deep roots in Marlborough viticulture have brought renewed energy and a strong sense of continuity.

Lake Chalice works with three distinctive vineyard sites. The Falcon Vineyard in the Wairau Valley sits on free-draining river gravels, while the cooler Eyrie Vineyard in the Waihopai Valley combines clay and gravel. Talon Vineyard lies in Dillon’s Point, close to the coast, where deep silty loam produces intensely aromatic Sauvignon Blanc with generous fruit and bright natural freshness.

Winemaker Chloe Gabrielsen approaches each vineyard and parcel individually, aiming to capture a clear snapshot of place and season rather than impose a house formula. The wines are polished, expressive and reliably good value, balancing Marlborough’s famous fruit intensity with freshness and definition. Lake Chalice also supports the Marlborough Falcon Conservation Trust, helping protect the native kārearea depicted on every bottle.

Made from 100% Sauvignon Blanc grown on mature vines at Talon Vineyard in Dillon’s Point, part of Marlborough’s Lower Wairau Valley. The vineyard’s deep, fertile silty-loam soils encourage vibrant aromatics and generous fruit concentration.

The grapes were pressed immediately after harvest to limit skin contact and preserve freshness. Cool fermentation retained the wine’s passionfruit, citrus, and herbal character, while the naturally bright acidity shaped its dry, mineral finish. The wine is sealed under a screwcap, is suitable for vegans and vegetarians, and has an alcohol level of 13%. Best served well chilled at 8 to 12°C.
