Domaine William Fèvre is one of the great reference points of Chablis. William Fèvre took over his family estate in 1959, building on generations of local winegrowing and steadily expanding the domaine through important Premier Cru and Grand Cru acquisitions.

Today the estate controls around 70 hectares of vineyards, including significant holdings in some of Chablis’s most celebrated climats. Didier Séguier has been a central figure in the domaine for decades, helping shape a style built around precision, freshness and clear expression of terroir. Environmental work has also played an important role, with organic farming methods used across much of the estate and HVE certification achieved early in Chablis.

Since January 2024, Domaine William Fèvre has been part of the Domaines Barons de Rothschild Lafite family. The philosophy remains firmly Chablisien: Chardonnay, Kimmeridgian soils, careful vineyard work and restrained cellar handling. For customers, the result is reassuringly classic Chablis with real pedigree, consistency and a strong sense of place.

The 2023 Chablis is made from 100% Chardonnay grown on Kimmeridgian subsoil, where marl and clay-limestone are rich in fossilised oyster remains. The vineyards stretch along the Serein Valley and benefit from varied exposures that help preserve freshness while giving the wine depth and aromatic complexity.

The 2023 vintage followed a mild, dry winter with relatively little frost damage. A hot May was followed by June storms, while summer heat and rainfall accelerated ripening. A drier August slowed véraison slightly, before an early September harvest brought generous quantities of healthy fruit.

The grapes are handled gently by gravity without pumping, then undergo a short pneumatic pressing of around 1.5 to 2 hours. After light settling, alcoholic and malolactic fermentations occur naturally. Most of the wine is fermented in small stainless-steel tanks, with around 5 to 10% vinified in old French oak barrels averaging six years of age. The wine ages for 10 to 12 months, predominantly in stainless steel, with the oak portion spending around five to six months in barrel. Alcohol is 12.5%, and the wine is bottled under DIAM.

The result is classic Chablis with citrus, pear, white flowers and a clear mineral line. The small amount of old oak adds texture without masking the fruit, while the stainless steel keeps everything precise and energetic. It is ready to drink now with seafood or lighter dishes, but the acidity and mineral structure should allow it to develop further over the next few years.
