2023 Frascati Superiore DOCG, Castel de Paolis

The undisputed champions of Frascati wine, the Santarelli family is almost single- handedly responsible for transforming Frascati into a Titan of the volcanic wine category. Their Frascati DOCG is a deserved winner of the Tre Bicchierri award and is truly one of Italy’s great white wines.

This is an intense and aromatic Frascati, with notes of juicy exotic fruits complemented by floral top notes. Refreshing yet textured with fruity flavours of apple and pear layered with hints of minerality, finishing on a delicious savoury note.

Made from a blend of local grape varieties, which flourish on the volcanic hills south of Rome. The vineyards were completely replanted during 1990 to 1992, at a density of 5,500 vines per hectare to limit vigour, thus concentrating the flavours in the grapes. The vines are planted at an elevation of 300 metres above sea level and are orientated towards the south-east to maximise sunlight exposure. The volcanic soils are layered with granular tuffs, which are rich in mineral elements producing elegant and fresh wines with a distinctive character.

Castel de Paolis is a family-owned estate at Grottaferrata in the Castelli Romani, a chain of historic hill towns immediately south of Rome. Giulio Santarelli began acquiring land here in 1974, initially supplying grapes to local cooperative wineries. The estate’s modern story began in 1985 through his collaboration with Professor Attilio Scienza of the University of Milan.

Their ambitious project sought to revitalise the wines of the Castelli Romani by studying both traditional local grapes and carefully selected international varieties. The vineyards were progressively replanted between 1988 and 1993, replacing high-yielding pergolas with densely planted rows designed to produce smaller quantities of more concentrated fruit.

The vineyards sit around 250 metres above sea level on volcanic soils rich in tufa, pozzolana and mineral salts. Native varieties such as Malvasia del Lazio, Bellone, Bombino and Cesanese remain central to the estate’s identity. A purpose-built winery was completed in 1992, introducing gentle pressing and temperature-controlled fermentation while maintaining a clear focus on regional character.

Castel de Paolis has become an important modern reference point for Lazio, demonstrating that Frascati can offer fragrance, texture, mineral depth and genuine gastronomic appeal.

The 2023 Frascati Superiore is a blend of 70% Malvasia del Lazio with Trebbiano Giallo, Bombino and Bellone. The grapes come from hillside vineyards around Grottaferrata at approximately 250 metres above sea level.

The vines are trained using the cordon-spur system at a density of approximately 5,500 plants per hectare. Granular tufa and pozzolana give the volcanic soils excellent mineral content, contributing to the wine’s characteristic savoury freshness.

The fruit was vinified in temperature-controlled stainless-steel tanks at approximately 18°C, with fermentation lasting eight to ten days. The 2023 wine was subsequently matured in steel and glass, preserving its aromatic fruit and floral character without the influence of oak.

Alcohol: 14%. Best served at approximately 10 to 12°C.
