Chablis

Chablis is Chardonnay in its purest, sharpest and most mineral form. Sitting at the northern edge of Burgundy, closer to Champagne than the CΓ΄te d’Or, this is a cool-climate region where the wines are shaped by freshness, precision and the famous limestone soils beneath the vines. Expect citrus, green apple, white flowers, oyster shell, wet stone and that unmistakable Chablis tension that makes every glass feel clean, bright and brilliantly focused.

What makes Chablis special is its sense of place. The best vineyards sit on Kimmeridgian limestone and marl, rich in ancient marine fossils, giving the wines their chalky texture, saline edge and long, mouth-watering finish. The Serein River runs through the region, with Premier Cru and Grand Cru vineyards rising on the surrounding slopes, each bringing its own balance of ripeness, structure and mineral intensity.

Winemaking in Chablis is usually designed to let the vineyard speak. Many wines are fermented and aged in stainless steel to preserve purity and freshness, while top producers may use older oak or larger barrels for texture rather than obvious flavour. The result is white Burgundy without heaviness: elegant, dry, citrus-led and deeply food-friendly.

From crisp village Chablis to layered Premier Cru and ageworthy Grand Cru, this is one of the world’s great expressions of Chardonnay. Perfect with oysters, seafood, roast chicken, goats’ cheese or simply when you want a white wine with clarity, class and serious mineral bite.
