2019 Chablis 1er Cru Vaulorent, Domaine William Fèvre

Concentrated, mineral and beautifully mature, this 2019 Vaulorent sits remarkably close to Grand Cru territory in both geography and character. Lemon oil, green apple and white peach meet white flowers, chalk and a cool iodine note, with a subtle creamy edge bringing extra depth. The warmth of 2019 gives generous fruit, but the marl-rich soils and classic Chablis acidity keep everything taut and precise.

On the palate, it is silky and enveloping, with ripe citrus and orchard fruit carried by racy acidity and a long, saline finish. Seasoned French oak adds texture rather than obvious woodiness, while bottle age has started to soften the wine into a wonderfully harmonious place. This is a compelling buy for customers who want mature Premier Cru Chablis with near-Grand Cru concentration, genuine pedigree and plenty of life still ahead.

Vaulorent is technically part of Fourchaume, but its position makes it exceptional. It is the only Premier Cru on the same hillside as the Chablis Grands Crus, sitting directly beside Les Preuses. Domaine William Fèvre is one of the largest owners in the site, and the wine is often regarded as one of the closest Premier Cru expressions to Grand Cru in the estate’s range.

Domaine William Fèvre is one of the defining estates of Chablis, with family winegrowing roots in the region stretching back for generations. William Fèvre took control of the domaine in 1959 and steadily expanded its holdings across many of Chablis’s finest Premier Cru and Grand Cru vineyards.

The estate’s modern reputation has been shaped by a commitment to precision and site expression. Under Didier Séguier, the winemaking moved firmly towards gentle handling, restrained use of seasoned oak and extended élevage, allowing the differences between individual climats to remain clear rather than imposing a strong cellar signature.

William Fèvre also became an early adopter of environmentally sensitive vineyard management in Chablis, practising organic methods for many years before beginning formal certification. The domaine’s Premier Cru and Grand Cru holdings have also seen biodynamic approaches in the vineyard.

For customers, Vaulorent is particularly exciting because of its location beside Les Preuses. It offers the scale, mineral concentration and longevity associated with Grand Cru Chablis, but within a Premier Cru bottling from one of the appellation’s most trusted producers.

The 2019 Vaulorent is made from 100% Chardonnay. Domaine William Fèvre owns around 3.6 hectares within this prized section of Fourchaume, much of it immediately beside Grand Cru Les Preuses. The soils contain a high proportion of Kimmeridgian marl and clay, helping retain moisture during warm vintages while giving the finished wine its concentration, salinity and mineral character.

The warm 2019 season produced a small, concentrated crop, with yields for this wine around 34 hectolitres per hectare. Despite the warmth, the fruit retained strong acidity, creating a vintage with both richness and exceptional tension.

Around 40 to 50% of the wine is fermented in seasoned French oak barrels averaging roughly six years old, with the remainder vinified in small stainless-steel tanks. Total ageing lasts around 14 to 16 months, including five to six months on fine lees in barrel for the oak-aged portion, before final maturation in stainless steel. Alcohol is 13%, and the wine is bottled under DIAM.

Now with beautiful maturity, the wine shows lemon, green apple and white peach alongside softened creamy notes, chalk, iodine and a long saline finish. It still has plenty of structure and acidity, but bottle age has made the texture smoother, broader and more savoury. It is ready to enjoy now with richer seafood or poultry, while its concentration and mineral backbone give it plenty of potential to continue developing.
