2023 Saint-Aubin 1er Cru Les Frionnes, Domaine Hubert Lamy
Burgundy, France
“The Subtle Brilliance”
Pale gold with a silvery shimmer, this Saint-Aubin 1er Cru is both poised and quietly powerful. Aromas of lemon curd, crushed oyster shell and white blossom rise from the glass, with hints of hazelnut and flint adding depth. The palate is finely etched with citrus and orchard fruit carried by vibrant acidity and a distinctive mineral backbone. Textural, pure, and endlessly refined, it glides into a long, saline finish that hums with energy.
For when: you want elegance without ego.
Pairs with: Dover sole, roast guinea fowl, or a simple plate of Comté.
If this wine were a feeling, it’d be confidence whispered, not declared.
From the visionary Olivier Lamy, Les Frionnes is drawn from mid-slope vineyards rich in limestone and marl, a site that naturally produces wines of clarity and drive. Hand-harvested fruit, wild-yeast fermentation, and ageing in large, neutral oak barrels bring definition and texture without excess. The 2023 vintage is a testament to Lamy’s precision, a wine of quiet intensity and effortless grace.
About the 2023 Vintage in Burgundy:
2023 offered growers a near-perfect balance between sunshine and freshness. After a mild spring and generous summer, the harvest produced Chardonnay of vibrant fruit, supple texture, and fine natural acidity. In Saint-Aubin, the wines radiate purity and finesse - the kind of vintage that captures both place and emotion, reminding us why this once-hidden corner of Burgundy is now one of its most exciting.

Founded in 1973 by Hubert Lamy and now led by his son Olivier Lamy, this family domaine has become one of Burgundy’s most respected and dynamic producers. Based in Saint-Aubin, Domaine Hubert Lamy cultivates around 18 hectares of vineyards across Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay with vines averaging 40 to 60 years of age.
Olivier Lamy is renowned for his meticulous vineyard work and minimalist philosophy: high-density planting, hand harvesting, wild-yeast fermentations and restrained oak use define his precise, terroir-driven wines. Whites are known for their cut-glass tension, minerality, and purity, while the reds, particularly from sites like La Goujonne, show silken fruit, finesse and quiet power.
In recent years, the domaine has become a benchmark for Saint-Aubin, with wines that regularly rival those from its more famous neighbours in Puligny and Chassagne. Critics from Vinous, Decanter and Jasper Morris MW consistently rank Lamy’s bottlings among the Côte de Beaune’s finest, describing them as “thrilling, finely chiselled and profoundly expressive of place.”
The white grapes are crushed and then slowly pressed in a pneumatic press, lightly settled, and transferred into barrels (350 litres) or demi-muids (600 litres) aged between 3 and 15 years, where the grape juice undergoes fermentation. Temperature control in the barrels and a cool cellar encourage a long alcoholic fermentation using natural yeasts. We use very little SO₂ (sulphur dioxide).
Bottling takes place after 24 months of maturation..
