2021 Aile d’Argent Blanc, Château Mouton Rothschild

Pauillac, Bordeaux, France

Silver Wing

Luxurious, luminous and beautifully poised, Aile d’Argent 2021 opens with white peach, grapefruit and ripe citrus, lifted by acacia blossom and a delicate tropical richness. Apricot and pineapple unfold alongside hints of sage, ginger and gently toasted oak, while a flinty mineral thread gives the aromas definition. There is generosity here, but the wine’s cool freshness keeps every layer clear and inviting.

The palate is broad and silky, with a gently creamy texture balanced by lively acidity and a subtle, mouthwatering grip. Succulent stone fruit gives way to lemon peel and a lingering saline finish, bringing precision to the wine’s considerable depth. This is white Bordeaux with the presence for a special dinner, particularly alongside fine fish or shellfish. Already expressive, it has the structure to develop greater complexity through the 2030s with careful cellaring.

For when: The occasion calls for white wine with every bit as much presence as the main event.

Pairs with: Roast turbot with beurre blanc, lobster with lemon butter, scallops with cauliflower purée, chicken with morels, crab ravioli or roast veal with a light cream sauce.

Aile d’Argent means “Silver Wing”, the name of a magical teapot in a story Baron Philippe de Rothschild invented for his daughter, Philippine. He later wrote the tale down, and it was published in 1947. When Philippine created a white wine at Mouton, she chose the name as a tribute to that childhood memory, giving this small-production Bordeaux a particularly personal place in the family’s history.

Château Mouton Rothschild’s modern history began in 1853, when Baron Nathaniel de Rothschild purchased Château Brane-Mouton in Pauillac and renamed it. Subsequent generations shaped one of Bordeaux’s most celebrated estates, combining ambitious winemaking with a deep connection to art and culture. Aile d’Argent grew from Baroness Philippine de Rothschild’s decision in the early 1980s to plant white varieties on a small part of the property.
The estate’s vineyards occupy gravelly terrain in the Médoc, where the nearby Gironde estuary moderates temperatures. Aile d’Argent’s white grapes grow on sandy, gravelly soils, providing a distinctive setting for Sauvignon Blanc, Sémillon and Sauvignon Gris. Although the vineyard lies at Mouton’s Pauillac estate, the dry white wine carries the Bordeaux appellation.
Head winemaker Jean-Emmanuel Danjoy oversees the technical work across the family’s Pauillac properties. At Mouton, close attention to the vineyard and the character of each vintage guides production. Aile d’Argent brings that exacting approach to white wine, with carefully judged oak and an emphasis on balancing aromatic richness, texture and freshness.

The 2021 blends 45% Sauvignon Blanc, 36% Sémillon and 19% Sauvignon Gris, harvested between 6 and 20 September. A cool, unsettled growing season was followed by drier conditions in August and early September, helping the grapes reach maturity while retaining freshness. The fruit came from the estate’s sandy, gravelly white-wine vineyard.
Malolactic fermentation was limited to 15% of the blend. This selective approach softened a portion of the wine’s acidity and contributed roundness while preserving the bright character of the vintage.
The wine was matured in oak barrels, 45% new. The oak contributes subtle spice and texture, supporting the fruit and giving the wine the breadth to accompany richer dishes. Its balance of concentration and acidity provides scope for further bottle development.
Alcohol: 13%. pH: 3.25. Recommended drinking window: 2024 to 2038.
