This is Minervois with depth, warmth and a beautifully biodynamic heartbeat. From La Livinière, it opens with blackcurrant, blackberry, dark plum and wild raspberry, before garrigue herbs, liquorice, cracked pepper, violet and a cool mineral note begin to rise. It feels generous, but never overworked, with ripe fruit, southern spice and a lovely sense of earth beneath it all. Château Maris lists La Touge as Syrah, Grenache and Carignan, aged for 16 months in concrete and egg-shaped vats.
The palate is full, smooth and quietly powerful, with black fruit, cassis, savoury herbs and silky tannins carrying through to a long, mellow finish. There is plenty of richness here, but the acidity is beautifully folded in, giving lift and freshness to the darker fruit. It is Languedoc in a very polished mood: sun-warmed, herbal, mineral and deeply satisfying.

Pairs with roast lamb, beef rib, cassoulet, mushroom stew, grilled sausages, smoky aubergine, hard cheeses, or anything involving rosemary and fire.

Château Maris is one of the Languedoc’s most environmentally focused producers, based in Minervois La Livinière and closely associated with biodynamic farming.
