Tahbilk’s 2019 Marsanne is one of Australia’s great white wine signatures, here in magnum for extra presence and slower, more graceful evolution. Now showing the first delicious signs of maturity, it opens with lemon curd, honeysuckle, jasmine, pear, beeswax, almond, fresh hay and a gentle marmalade richness. Still bright, still lifted, but beginning to glow.

On the palate, it is dry, textural and quietly savoury, with citrus, orchard fruit and honeyed complexity carried by a clean mineral line. Marsanne’s natural softness gives it generosity, while Tahbilk’s hallmark freshness keeps the finish long, nutty and precise. A brilliant mature white for anyone who likes their ageworthy whites with texture, charm and a story.

Tahbilk is one of Australia’s historic wine estates, established in 1860 in Nagambie Lakes and owned by the Purbrick family since 1925. Its connection with Marsanne is extraordinary: the estate traces the grape back to nineteenth-century “White Hermitage” cuttings and still works with vines planted in 1927, among the oldest and largest single holdings of Marsanne in the world. This is a true Australian classic, loved for its lemony youth, honeyed age and remarkable ability to develop quietly in bottle.

Established in 1860, Tahbilk is an historic family-owned winery, renowned for their rare aged Marsanne. The estate has the world’s largest single holding of the varietal and produces Marsanne from vines established in 1927, which are among the oldest in the world. Tahbilk is known as ‘tabilk tabilk’ in the language of the Daungwurrung clans, which translates as the ‘place of many waterholes’. It perfectly describes this premium viticultural landscape, which is located in the Nagambie Lakes region of Central Victoria. The estate comprises 1,214 hectares, including a seven-mile frontage to the Goulburn River. Environmental sustainability is paramount at Tahbilk and in 2013 they became carbon neutral. In 2016, Tahbilk was awarded ‘Winery of the Year’ by James Halliday.
Tahbilk is home to some 200 hectares of vineyards specialising in grape varietals from the Rhone including whites varietals: Marsanne, Viognier and Roussanne and red varietals Shiraz, Grenache and Mourvedre. Also growing Cabernet Sauvignon, Merlot, Cabernet Franc, Chardonnay, Riesling, Pinot Gris, Sauvignon Blanc and Verdelho grapes.

Made in a reductive style – without contact with oxygen to preserve the fresh, fruity character. The fruit was destemmed, lightly crushed and cooled through a heat exchanger and pressed. The must was clarified and fermented with neutral yeasts at low temperatures of 10 to 12°C, fermenting at 0.5 to 1° Baume per day. The ferment stopped at 2 to 3 grams per litre residual sugar. The wine did not go through malolactic conversion in order to retain its crisp character. It was then protein stabilised, cold stabilised, medium filtered, blended and bottled.
