This is Barossa Shiraz with plenty of muscle, but a very satisfying polish to the edges. It opens with black cherry, raspberry, blackberry and plum, then moves into tilled earth, vanilla, nutmeg, milk chocolate and warm spice. There is a bold, dark-fruited core here, but the lift from Eden Valley fruit gives it a little extra snap and peppery freshness.
The palate is rich, dense and generous, with ripe blackberry and plum wrapped in textured tannins and well-balanced oak. It feels full and comforting, but not clumsy, with sweet spice, chocolate and a long, persistent finish. This is proper steak-night Shiraz: dark, smooth, spicy and very easy to understand.

Pairs with scotch fillet, charred greens, barbecue brisket, lamb chops, beef stew, smoky aubergine, mature cheddar, or a loaded burger.
If this wine were… a meal, it would be a thick steak on a wooden board, peppercorn sauce on the side and no one checking the time.
St Hallett is one of the Barossa’s defining Shiraz producers, established by the Lindner family in 1944 and now widely associated with the region’s old vines, grower relationships and deep knowledge of Barossa terroir. The estate describes itself around the idea of being “Masters of Shiraz,” with a focus on saving old vines and tailoring fermentation and maturation to individual parcels. Butcher's Cart reflects that philosophy in a generous, approachable form, sourced from northern Barossa Valley vineyards on red-brown sands over clay, with Eden Valley fruit adding spice, lift and length. The 2020 was matured for 10 months in American and French oak hogsheads, including 30% new oak.
