Head winemaker Rafael Urrejola has spent a great deal of time understanding the diversity of Chile’s vineyard sites; the result is the emblematic ‘Terroir Hunter’ range.

Dark, expressive and beautifully composed, this Cabernet opens with blackcurrant, blackberry and blueberry, layered with black olive, eucalyptus, cedar and warm spice. Notes of dark chocolate, mocha and graphite emerge with air, while a subtle earthy, balsamic character gives the wine a distinctly savoury edge.

Juicy and concentrated on the palate, with generous black fruit framed by rounded, velvety tannins and fresh acidity. The oak is polished and well integrated, adding depth without overwhelming the fruit. Powerful but never heavy, it finishes long and persistent with lingering notes of cassis, dark chocolate, spice and warm earth.

For when: A proper Cabernet is required, but you want freshness as well as power.

Pairs with: Roast beef, grilled ribeye, slow-cooked lamb, venison, duck, mushroom pie or mature hard cheeses.

The grapes come from a low-yielding 6.45-hectare vineyard beside the River Tutuvén, five kilometres south of Cauquenes in the Maule Valley. Planted in 2009, the vines grow on gentle slopes of red clay and decomposed granite with a high quartz content. Warm, dry days and cool nights allow Cabernet Sauvignon to ripen fully while retaining freshness and aromatic definition.

Founded by Francisco Undurraga Vicuña in 1885, Viña Undurraga is one of Chile’s oldest and most established wineries. From its historic home in Talagante, the estate has grown to encompass vineyards across many of Chile’s leading regions, including Maipo, Leyda and Cauquenes.

The T.H. range stands for Terroir Hunter and represents Undurraga’s continuing search for small vineyards with distinctive soils, climates and personalities. Rather than following regional convention, each wine is shaped around an individual plot chosen for its ability to reveal a precise sense of place.

The project is led by head winemaker Rafael Urrejola, whose restrained approach places freshness, balance and vineyard character ahead of excessive extraction or oak. The resulting wines are among Undurraga’s most expressive, showing how dramatically individual Chilean terroirs can shape familiar grape varieties.

The Cabernet Sauvignon grapes were hand-picked from Undurraga’s low-yielding Cauquenes vineyard and carefully sorted before vinification. A cool pre-fermentation maceration encouraged the gradual extraction of colour and aroma, followed by fermentation with regular pump-overs to develop structure and depth.

After fermentation, the wine remained on its skins for an extended period before being transferred to French oak barrels for approximately 18 months. Around 30% of the barrels were new, with the remainder divided between one-year-old and older oak. This measured élevage softened the tannins and introduced subtle notes of cedar, mocha and dark chocolate without masking the fruit. The wine was bottled without filtration.
