2018 'Cane Cut' Marsanne, Tahbilk, 500ml

Established in 1860, Tahbilk is a historic family-owned winery, renowned for its Shiraz, Cabernet Sauvignon and of course its Marsanne!  Marsanne is one of the world’s rarest grape varieties, originating in the Northern Rhone & Hermitage regions of France. It is grown in only 3 other countries: Australia, America & Switzerland. Tahbilk holds the largest and oldest single holding of the variety in the world.

This beautiful dessert wine is full of citrus and tropical fruit characters that are complemented by lush marmalade, nutty and honeysuckle notes on a richly opulent palate, refreshed by a mineral-like acidity.  Delicious with stinky cheeses, summer puddings, or just because you enjoy life on the sweet side!

This wine is named after the practice of cutting the canes, where the fruiting cane is detached from the vine. The bunches of grapes are left to hang prior to harvest, drying the fruit, which concentrates the flavours and sugars, resulting in a luscious wine.

Tahbilk is one of the great names of Australian wine, established in 1860 in the Nagambie Lakes region of Central Victoria. The estate was purchased by the Purbrick family in 1925 and remains family-owned, giving it a rare continuity in a modern wine world that changes quickly. Its old cellars, historic vineyards and deep connection to the Goulburn River landscape make Tahbilk feel like a living piece of Australian wine history.

The estate is especially famous for Marsanne. Originally mistaken for “White Hermitage” in the 19th century, the variety became one of Tahbilk’s defining strengths. Today, the estate has the world’s largest single holding of Marsanne and produces wines from vines planted in 1927, among the oldest of the variety anywhere in the world.

Nagambie Lakes also gives Tahbilk a distinctive natural advantage. The surrounding lakes, billabongs, creeks and river systems moderate the warm inland climate, helping preserve freshness and definition. This is what makes the wines generous but never dull: there is always a clean line beneath the richness.

Cane Cut Marsanne is made using the cane-cut method, where the fruiting canes are cut while the bunches remain hanging on the vine. This stops the vine from feeding the grapes, allowing the fruit to slowly dehydrate and concentrate its sugars, acidity and flavour before harvest. The result is a naturally rich, luscious sweet wine with intensity rather than simple sweetness.

The 2018 wine is Marsanne-led, with tiny additions of Viognier and Chardonnay. The grapes were hand-picked and handled reductively to protect freshness and aromatics. Fermentation took place in stainless steel at cool temperatures using selected neutral and aromatic yeasts, lasting around ten days. Fermentation was then arrested by chilling the wine to 2°C, leaving a naturally sweet finish with around 120 grams per litre of residual sugar.

Tahbilk’s own technical data records stainless steel maturation, 11% alcohol, 7.9g/l acidity, pH 3.29 and 126.4g/l residual sugar. The 2018 growing season was dry and warm, with cooler nights helping control sugar accumulation and preserve clear varietal definition in the whites.
