Made from 100% Pedro Ximénez, the grapes for San Emilio are hand-harvested and then sun-dried until they become raisins, concentrating their sugars and aromatics. Fermentation begins slowly and is halted to preserve natural sweetness, before the wine spends 12 years ageing oxidatively in the warm cellars of Jerez de la Frontera.
