Made from 100% Palomino, the Palo Cortado Peninsula is aged in Bodega Emperatriz Eugenia in Jerez de la Frontera, the heart of the Sherry Triangle. Its story is one of nature’s quiet intervention: a wine that begins ageing under flor, like a Fino or Amontillado, but naturally loses its protective layer to continue maturing oxidatively, developing the richness and body of an Oloroso while retaining aromatic delicacy.
