Founded in 1973 by Hubert Lamy and now led by his son Olivier Lamy, this family domaine has become one of Burgundy’s most respected and dynamic producers. Based in Saint-Aubin, Domaine Hubert Lamy cultivates around 18 hectares of vineyards across Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay with vines averaging 40 to 60 years of age.
Olivier Lamy is renowned for his meticulous vineyard work and minimalist philosophy: high-density planting, hand harvesting, wild-yeast fermentations and restrained oak use define his precise, terroir-driven wines. Whites are known for their cut-glass tension, minerality, and purity, while the reds, particularly from sites like La Goujonne, show silken fruit, finesse and quiet power.
In recent years, the domaine has become a benchmark for Saint-Aubin, with wines that regularly rival those from its more famous neighbours in Puligny and Chassagne. Critics from Vinous, Decanter and Jasper Morris MW consistently rank Lamy’s bottlings among the Côte de Beaune’s finest, describing them as “thrilling, finely chiselled and profoundly expressive of place.”
The white grapes are crushed and then slowly pressed in a pneumatic press, lightly settled, and transferred into barrels (350 litres) or demi-muids (600 litres) aged between 3 and 15 years, where the grape juice undergoes fermentation. Temperature control in the barrels and a cool cellar encourage a long alcoholic fermentation using natural yeasts. We use very little SO₂ (sulphur dioxide).
Bottling takes place after 24 months of maturation..
