2022 Domaine Cavalier Rouge, Chateau de Lascaux

Pic Saint-Loup Languedoc-Roussillon, France

Deep crimson in the glass, this Languedoc red brims with ripe blackberries, redcurrant and warm spice, lifted by a hint of garrigue and wild herbs. The palate is smooth and generous, all juicy fruit and soft tannins, balanced by a fresh, savoury edge that keeps it grounded. It’s vibrant, sun-soaked and effortlessly drinkable - the kind of red that makes any meal feel a little more Mediterranean.

For when: the grill’s fired up and the evening’s stretching long.
Pairs with: herby lamb skewers, ratatouille, or pizza straight from the oven.
If this wine were a person, it’d tell great stories, refill your glass, and never check the time.

Domaine Cavalier is part of Château de Lascaux, a historic family estate in the Pic Saint-Loup appellation, farmed organically for over fifteen generations. The vineyards, surrounded by garrigue and limestone hills, are perfectly placed between mountain freshness and Mediterranean warmth. A blend of Syrah, Grenache and Cabernet Sauvignon, the 2022 vintage captures the essence of southern France - bright fruit, herbal depth, and a signature finesse that speaks of both place and heritage.

Nestled in the rugged hills north of Montpellier, Château de Lascaux is a family estate with over four centuries of history and a reputation as one of the leading lights of the Pic Saint-Loup appellation. The estate takes its name from the limestone (“lascaux”) soils that define its vineyards with stony, mineral-rich terrain that lends freshness and tension to the sun-drenched fruit typical of the Languedoc.

Today, the property is run by Jean-Benoît Cavalier, the fifteenth generation of his family to tend these vines. Under his leadership, the domaine has become fully certified organic and a model of sustainable viticulture, with the surrounding garrigue and forest forming a natural ecosystem that protects biodiversity and balances the vines’ environment.

In the cellar, Jean-Benoît combines tradition with a restrained, modern touch, favouring native yeasts, gentle extraction and ageing in neutral vessels to highlight purity and terroir. The result is a collection of wines that unite southern warmth with northern precision: expressive, elegant and unmistakably true to their wild, limestone homeland.

Traditional winemaking with short maceration of 3 to 4 days followed by alcoholic fermentation for 10 days. Aging in concrete tanks.
