The Midnight Elements Cabernet Sauvignon is part of the Elements range of wines from Paserene showcasing their vineyards and the skill of winemaker Martin Smith.
On the nose, you are met with dark notes of black cherry, cassis, and liquorice which make the mouth water instantly. The palate carries these aromas through, with succulent berry flavours complemented by rich vanilla undertones. There is a minerality that balances out the richness, with iodine and tannins making for an interesting first sip. You will also find flavours of woodsmoke and an earthiness that gives our Midnight a lingering, meaty finish.
The Midnight wine from Paserene’s Tulbagh wine estate and is the best example of this terroir’s propensity for developing grapes that have deep aromas and meaty flavours.

Paserene is the passion of winemaker Martin Smith (formerly of Vilafonte and now dedicating his time to Paserene) working jointly with Ndabe Mareda. Now complete with a state of the art tasting room located just outside Franschhoek (well worth a visit, trust us) – Paserene have taken a best of breed approach and work with multiple parcels of land in Elgin, Franschhoek and Tulbagh. The future is certainly looking bright as well for this boutique winery, with the recent purchase of a farm in the shadow of the Witzenberg mountains; the neighbouring farm to where they currently source the fruit for the Union blend. It’s rugged, wild and fairly untouched at present, but with great plans for planting vines, and even luxury ecolodges among the fynbos. We’re so excited to be part of the Paserene story, and the future it holds.
Paserene does not use generic barrels because they want to produce extraordinary results. New barrels are seasoned, dry, and are without toasting for up to five years, before being steamed. They are then used for 16 months to make the wine. There is an inherent patience in their winemaking.
Martin is a precision winemaker, rarely adding anything to his wines, and he chooses not to filter them. He prides himself on spending the time and effort on exactly what goes into the bottle, to ensure that what comes out is as authentic as possible. Martin says when you drink their hand-crafted wine, you are creating a moment in time that will never be forgotten.
