VORS Palo Cortado 30-year-old, Bodegas Lustau

Jerez de la Frontera, Andalucía, Spain

Elegant, mysterious and hauntingly complex, the VORS Palo Cortado 30-Year-Old is a Sherry that defies convention, a bridge between worlds, crafted by time itself. Coppery topaz in hue, it opens with a lifted, aromatic nose of toasted pecans, candied citrus peel and salted caramel, threaded with sea breeze, spice and varnished oak. On the palate, it’s both taut and expansive with layers of orange zest, toffee, walnut and dark chocolate glide across a silken texture, balanced by a flicker of salinity and a subtle, bittersweet edge. The finish is endless: savoury, nutty, and glowing with quiet warmth. Profoundly dry yet deeply resonant, it’s a wine of reflection and rare beauty.

For when: the evening slows and silence feels like luxury.
Pairs with: aged Comté, roasted nuts, foie gras or contemplative company.

Made from 100% Palomino, this remarkable Palo Cortado is drawn from a tiny solera of just seven casks, selected by the late Manuel Lozano, Lustau’s legendary cellar master. Over more than three decades of oxidative ageing in Jerez de la Frontera, it has developed the aromatic precision of an Amontillado and the richness of an Oloroso, the hallmark of the Palo Cortado style.

Part of Lustau’s iconic VORS (Very Old Rare Sherry) collection, each bottle bears the weight of history and the hand of craftsmanship. The result is a wine of breathtaking finesse and concentration, dry yet soulful, saline yet sweetly spiced, a true testament to Lustau’s mastery of time and tradition. Serve gently chilled at 13–14°C and let its quiet depth unfold sip by sip.

Regarded as one of the greatest and most respected names in Sherry, Bodegas Lustau stands at the pinnacle of Andalusian winemaking, a benchmark for quality, authenticity, and craftsmanship. Founded in 1896 by José Ruiz-Berdejo, the estate began as a small almacenista (stockholder) ageing and blending wines for larger houses. Over the decades, Lustau evolved from humble beginnings into a global ambassador for fine Sherry, earning acclaim for its meticulous sourcing, blending, and innovation.

Based in Jerez de la Frontera, with additional bodegas in El Puerto de Santa María and Sanlúcar de Barrameda, Lustau uniquely represents all three of the Sherry Triangle’s towns, allowing the house to showcase the full spectrum of terroir and style: from the saline freshness of Manzanilla to the nutty depth of Amontillado and the velvety opulence of Pedro Ximénez.

Lustau’s defining strength lies in its unparalleled range. The Solera Reserva series highlights traditional, meticulously aged styles; the Almacenista collection honours small independent producers and their individual soleras; and the VORS (Very Old Rare Sherry) range offers century-old treasures of staggering complexity and rarity. Every wine undergoes patient maturation under flor or oxidative ageing in centuries-old casks, capturing the delicate balance between time, air, and wood.

Under the guidance of Emilio Lustau’s successors and now as part of the Caballero Group, the bodega continues to set the gold standard for Sherry, combining heritage and innovation with unwavering precision. Today, Lustau is celebrated not only for its technical mastery but for preserving the living soul of Jerez: wines of profound depth, layered aromatics, and timeless Andalusian grace.
