Amontillado del Castillo Almacenista Sobrinos de Antonio Caballero, Bodegas Lustau
El Puerto de Santa María, Andalucía, Spain
The Castle’s Secret.
Majestic, complex and deeply evocative, the Amontillado del Castillo from Lustau’s Almacenista collection is a masterpiece of age, air and ocean. Brilliant amber with copper reflections, it opens in regal fashion with aromas of hazelnut praline, candied orange peel and polished wood mingle with hints of smoke, spice and sea salt. On the palate, it’s dry yet layered with warmth and depth: intensely nutty, tangy with citrus and spice, and balanced by a fine, refreshing acidity that drives it long into a saline, endlessly persistent finish. Elegant, powerful and utterly captivating, the very essence of old-world Andalusian grace.
For when: the music fades, the candlelight softens, and the evening slows to perfection.
Pairs with: foie gras, smoked salmon, Manchego, or spiced Asian dishes.
If this wine were a building, it’d be a centuries-old castle, weathered, noble, and filled with stories.
Made from 100% Palomino, this Amontillado hails from a solera of just 38 casks ageing within the storied Castle of San Marcos in El Puerto de Santa María, a medieval fortress originally built by Alfonso X of Castile. Here, within thick stone walls and Atlantic breezes, the wine undergoes a long and patient transformation: beginning its life as a Fino under flor before ageing oxidatively for many years, developing extraordinary complexity and structure.
Part of Lustau’s revered Almacenista range, the Amontillado del Castillo honours the Sobrinos de Antonio Caballero, one of the small family cellars entrusted to preserve the region’s most traditional soleras. The result is a wine of striking depth and precision, dry yet generous, saline yet supple: a true jewel of the Sherry Triangle, crafted where time, place and history converge in every amber drop.

Regarded as one of the greatest and most respected names in Sherry, Bodegas Lustau stands at the pinnacle of Andalusian winemaking, a benchmark for quality, authenticity, and craftsmanship. Founded in 1896 by José Ruiz-Berdejo, the estate began as a small almacenista (stockholder) ageing and blending wines for larger houses. Over the decades, Lustau evolved from humble beginnings into a global ambassador for fine Sherry, earning acclaim for its meticulous sourcing, blending, and innovation.
Based in Jerez de la Frontera, with additional bodegas in El Puerto de Santa María and Sanlúcar de Barrameda, Lustau uniquely represents all three of the Sherry Triangle’s towns, allowing the house to showcase the full spectrum of terroir and style: from the saline freshness of Manzanilla to the nutty depth of Amontillado and the velvety opulence of Pedro Ximénez.
Lustau’s defining strength lies in its unparalleled range. The Solera Reserva series highlights traditional, meticulously aged styles; the Almacenista collection honours small independent producers and their individual soleras; and the VORS (Very Old Rare Sherry) range offers century-old treasures of staggering complexity and rarity. Every wine undergoes patient maturation under flor or oxidative ageing in centuries-old casks, capturing the delicate balance between time, air, and wood.
Under the guidance of Emilio Lustau’s successors and now as part of the Caballero Group, the bodega continues to set the gold standard for Sherry, combining heritage and innovation with unwavering precision. Today, Lustau is celebrated not only for its technical mastery but for preserving the living soul of Jerez: wines of profound depth, layered aromatics, and timeless Andalusian grace.
