2017 Zero Manipulation, Tollini Vineyard, Peterson
Mendocino County, California, United States
Lush yet laid-back, Zero Manipulation is California’s answer to authenticity. A blend of Carignan, Grenache and Syrah, it bursts with bright red fruit, raspberry, strawberry and pomegranate, wrapped in a soft frame of spice, liquorice and a hint of rustic earth. There’s a sense of effortless generosity here: juicy, supple, and grounded by a whisper of minerality. It’s the kind of wine that feels both wild and polished - all sunshine, red dust, and rhythm.
For when: You want California character without the Hollywood ego.
Pairs with: Smoky barbecue, wood-fired pizza, or friends who like a second bottle.
If this wine were: A vintage denim jacket - relaxed, genuine, and all the better for its imperfections.
Founded by Fred Peterson and now run with his son Jamie, Peterson Winery has built its reputation on a philosophy of “Zero Manipulation”, crafting wines that express their vineyards naturally, with minimal intervention and maximum honesty. The Tollini Vineyard, in Mendocino County’s Redwood Valley, has been tended by the Tollini family for three generations. Its head-trained, dry-farmed old vines of Carignan, alongside small parcels of Grenache and Syrah, grow on sunlit southwest-facing benches where red loam and gravel soils lend both texture and freshness. The 2017 vintage captures that legacy beautifully - a wine that celebrates California’s past with a refreshingly modern sense of restraint.

Owner Fred Peterson is an iconoclast with an old-world winemaking philosophy and a devotion to sustainable farming. With decades of expertise, between 1985 to 1990, he was the Vineyard Manager of the legendary Ridge Vineyards. The Peterson approach is to capture the essence of vintage and vineyard, a philosophy they call ‘Zero Manipulation’, with low-tech, yet high-touch winemaking techniques to produce artisanal wines of a place: wines with soul. Based in the Dry Creek Valley in northern Sonoma County, Peterson Winery was established in 1987. Fred’s son Jamie became assistant winemaker in the summer of 2002 and by 2006, Jamie was given the overall responsibility of winemaker. As a team, Fred and Jamie meticulously assess the grapes from each vineyard and vintage, evaluating how the weather, soil and site are interacting for the particular vintage. The duo pour their heart and soul into every bottle, producing beautifully balanced wines which truly reflect the time and the place.
Zero Manipulation is the winemaking philosophy that is employed on all Peterson wines, using the gentlest winemaking techniques possible to maximise flavours, aromas and the original essence of the grapes from the given vineyard and vintage. Fermentation took place with spontaneous fermentation with natural, indigenous yeasts. The wine was then barrel aged for 22 months in 100% neutral 225-litre barrels, mostly of French origin and of sixth fill up to 12th fill. Bottled without fining or filtration.
