Domaine Jean Goulley, a family estate now led by Philippe and Vincent Goulley, has long championed organic viticulture and restrained winemaking, allowing terroir to shine. Perched on the limestone slopes above the Serein River, Domaine Jean Goulley is one of Chablis’ quiet overachievers - a family estate renowned for its purity, precision, and deep respect for terroir. Founded in the 1980s by Jean Goulley, the domaine is now led by his son Philippe, who continues the family’s commitment to sustainable and organic viticulture, crafting wines that express Chablis in its most authentic form.
The estate’s vineyards span Chablis, Petit Chablis and Premier Cru sites, including Montmains, Fourchaume, and Mont de Milieu - parcels rooted in the region’s classic Kimmeridgian limestone and marl soils. These ancient marine sediments, rich in fossilised shells, lend the wines their hallmark minerality and saline finesse.
In the cellar, Philippe Goulley favours a minimal-intervention approach: fermentation with native yeasts, ageing on fine lees, and restrained oak use to preserve clarity and tension. The result is a collection of wines that are vivid, textured and refreshingly honest - Chablis with energy, elegance, and a strong sense of place.
The grapes were harvested at optimum maturity and were fermented with natural yeasts in temperature controlled vats using organic principles. The wine spent nine months in stainless steel vats and was made without oak influence to retain the purity of fruit and to let the characteristics of the Premier Cru Montmains terroir shine through. A restricted use of sulphur was used during the vinification and the wine was lightly filtered, prior to bottling.
