VORS Pedro Ximénez 30-year-old, Bodegas Lustau
Jerez de la Frontera, Andalucía, Spain
Dark as night and shimmering with a faint iodine hue, the VORS Pedro Ximénez 30-Year-Old is an extraordinary wine of depth, decadence, and balance, the very definition of liquid history. The nose is mesmerizing: waves of dried figs, dates and molasses intertwined with roasted coffee bean, dark cocoa, liquorice and Christmas spice. On the palate, it’s pure velvet, dense, luscious and impossibly rich, yet lifted by a subtle thread of acidity that keeps it graceful, never heavy. Layers of crème caramel, toffee, candied walnut and burnt sugar unfold endlessly, tapering to a finish that lingers like a warm echo of sweetness and spice. It’s not just dessert, it’s an experience of pure, timeless indulgence.
For when: you want to finish the evening with quiet awe.
Pairs with: dark chocolate torte, blue cheese, or sipped slowly on its own.
If this wine were: a memory, it’d be candlelight on old mahogany, rich, warm, and unforgettable.
Made from 100% Pedro Ximénez, this VORS Sherry is drawn from a tiny solera of just six casks, hand-selected by the late Manuel Lozano, Lustau’s legendary capataz (cellar master). The grapes are sun-dried to concentrate sugars and aromas before the long, oxidative ageing begins in the still air of Jerez de la Frontera, where the wine slowly transforms over three decades into something near transcendence.
Part of Lustau’s revered VORS (Very Old Rare Sherry) collection, certified as having an average age of at least 30 years, this PX is both profound and perfectly balanced: an opulent yet poised Sherry that encapsulates a century of craftsmanship. Serve gently chilled at 13–14°C in a fine glass, and let each sip remind you that some pleasures are meant to last forever.

Regarded as one of the greatest and most respected names in Sherry, Bodegas Lustau stands at the pinnacle of Andalusian winemaking, a benchmark for quality, authenticity, and craftsmanship. Founded in 1896 by José Ruiz-Berdejo, the estate began as a small almacenista (stockholder) ageing and blending wines for larger houses. Over the decades, Lustau evolved from humble beginnings into a global ambassador for fine Sherry, earning acclaim for its meticulous sourcing, blending, and innovation.
Based in Jerez de la Frontera, with additional bodegas in El Puerto de Santa María and Sanlúcar de Barrameda, Lustau uniquely represents all three of the Sherry Triangle’s towns, allowing the house to showcase the full spectrum of terroir and style: from the saline freshness of Manzanilla to the nutty depth of Amontillado and the velvety opulence of Pedro Ximénez.
Lustau’s defining strength lies in its unparalleled range. The Solera Reserva series highlights traditional, meticulously aged styles; the Almacenista collection honours small independent producers and their individual soleras; and the VORS (Very Old Rare Sherry) range offers century-old treasures of staggering complexity and rarity. Every wine undergoes patient maturation under flor or oxidative ageing in centuries-old casks, capturing the delicate balance between time, air, and wood.
Under the guidance of Emilio Lustau’s successors and now as part of the Caballero Group, the bodega continues to set the gold standard for Sherry, combining heritage and innovation with unwavering precision. Today, Lustau is celebrated not only for its technical mastery but for preserving the living soul of Jerez: wines of profound depth, layered aromatics, and timeless Andalusian grace.
