On the palate, it’s bone dry and feather-light, yet carries a beautiful depth, saline, nutty and subtly savoury, with a bright line of acidity that gives it lift and length. There’s a graceful evolution here, the freshness of a young Manzanilla intertwined with the gentle oxidative notes of age, finishing crisp, elegant and quietly profound.

This 100% Palomino Manzanilla Pasada comes from a solera of 80 casks ageing in the bodega of Manuel Cuevas Jurado on Calle Trabajadero in Sanlúcar de Barrameda, a site just steps from the ocean, where humidity and salt define the very character of the wine. Aged longer than a classic Manzanilla, the Pasada develops a deeper, more savoury personality as its protective layer of flor naturally thins with time, allowing a whisper of oxidation to add complexity.
