2020 Barolo 'Patres', San Silvestro

Barolo, Piedmont, Italy

A Barolo that balances muscle with grace, Patres 2020 opens with lifted aromas of red cherry, rose petal, and a touch of cedar and spice. The palate is poised and expressive, layers of ripe red fruit and wild herbs glide over firm yet polished tannins. There’s depth and energy in equal measure, with subtle earthy tones and a long, savoury finish that speaks of its Piedmont origins. Structured yet silky, it’s classic Barolo with a modern heartbeat.

For when: The night deserves something serious but not solemn.
Pairs with: Truffle risotto, roasted lamb, or aged Parmigiano.

In the heart of Barolo country, San Silvestro is a family-run estate that bridges tradition and innovation with quiet confidence. Based in Novello and now led by brothers Paolo and Guido Sartirano, the winery works closely with a network of trusted growers across Piedmont’s most prized crus. Their Patres Barolo is a blend of Nebbiolo from select hillside vineyards, crafted to showcase both power and finesse. Fermented in stainless steel and aged in large Slavonian oak casks, the 2020 vintage reflects a balanced, generous year - one that delivered supple fruit, fine tannins, and remarkable early approachability without losing Barolo’s trademark depth and longevity.

San Silvestro is located in the territory of the Commune of Novello. The grapes are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. San Silvestro represents the continuation of a project begun by Giovanni Sartirano which has been passed down through four generations. Today it is run by cousins Paolo and Guido Sartirano and San Silvestro has gradually expanded beyond the local market and their wines can be found around the world.

Following crushing and destemming, the grapes were fermented in stainless steel tanks at controlled temperatures of between 28 to 30°C. Maceration on the skins lasted for 12 days, with daily pump overs. Natural malolactic conversion took place during the spring following the harvest. The wine was then aged for three years: two of which were spent in large Slavonian oak casks and one year in tank, followed by six months in bottle, prior to release.
