2022 Pet Nat 8.21 Blanc de Blancs, Le Domaine d’Henri

Chablis, Burgundy, France

The Unexpected Spark from Chablis.

Elegant yet joyfully alive, the 2022 Pét Nat 8.21 Blanc de Blancs turns tradition on its head with Burgundian poise. Made from 35-year-old Chardonnay vines in Chablis, it’s crafted by the Méthode Ancestrale,  the original sparkling method, where fermentation finishes naturally in the bottle, trapping its own delicate bubbles. After 36 months ageing on lees and disgorgement with no added sugar, the result is a wine of remarkable finesse and purity. The nose unfurls with toasted brioche, citrus zest and a touch of tropical fruit, while the palate balances crystalline minerality with creamy texture and a fine, persistent bead. It’s both playful and profound - a sparkling wine that feels genuinely born of its terroir.

For when: you want bubbles with character, not choreography.
Pairs with: oysters, sashimi, or just a moment worth savouring.
If this wine were a person, it’d be the effortlessly chic Parisian who brings the sparkle to every table.

Le Domaine d’Henri, founded by Michel Laroche and his family after his departure from Domaine Laroche, is a return to roots, small, focused, and deeply connected to the land of Chablis. Based in Maligny, the estate farms old-vine Chardonnay from premier sites, following sustainable viticulture and minimal-intervention practices to let the vineyards speak clearly.

The 8.21 Blanc de Blancs embodies Michel’s restless curiosity and respect for innovation grounded in tradition. The name “8.21” signifies the 821 days from budburst to release, a meticulous process reflecting patience and precision. This is Chablis reimagined: mineral, detailed, and alive with energy - proof that even the most classic terroir still has a few delightful surprises up its sleeve.

Laroche is a famous name in Chablis, with family history dating as far back as 1695. Michel Laroche is the patriarch of the family and after decades as the director of Domaine Laroche, he decided in 2010 to sell his stake in the business and set up a smaller domaine, named after his father Henri. Michel had been leasing his private vineyards to the Laroche brand for many years and these vineyards now form the core of the D’Henri range, including the 1er Cru Fourchaume vineyard where the oldest parcel was planted in 1937.The domaine follows organic practices and they have undertaken studies of their vineyards with the help of renowned soil specialist Claude Bourguignon, adapting techniques to different soils to help fully express the qualities of each site. Any new plantings are done using cuttings from the oldest vines in Fourchaume. Vinification is done on a parcel by parcel basis and with minimal intervention, the focus being on expressing the aromatic intensity of each parcel. The grapes are carefully whole-bunch pressed and fermented in stainless steel, followed by long lees ageing. Michel is a fan of freshness with only some of the wines undergoing partial malolactic fermentation, while oak is used sparingly and more as a seasoning. The result is a creamy, round and savoury style with tension and chalky minerality running through.

Limited edition of 1200 bottles. Hand harvest in the morning freshness. Manual sorting of the green waste (on a conveyor belt.) Whole bunches are pressed in a pneumatic press, then the must rest for 12 hours at a temperature of 12 ° C in large special vats. Aging on fine lees at Obédiencerie in historical cellars of IXth century during 9 months on average in French oak barrels of 228L, 400 and 600L of 1 to 7 years old. Malolactic fermentation.
