VORS Dry Oloroso 30-year-old, Bodegas Lustau
Time, Bottled.
Profound, dignified, and endlessly complex, the VORS Dry Oloroso 30-Year-Old from Bodegas Lustau is a masterwork of patience and precision, a wine that speaks in centuries, not vintages. Deep old gold with bronze glints, it opens with majestic aromas of antique wood, roasted walnut, polished leather and orange marmalade, unfolding into subtler notes of tobacco leaf, spice, and warm varnish. The palate is commanding yet harmonious, rich and mouth-filling, with flavours of caramelised nuts, chestnut purée (marron glacé), bitter orange and old brandy. Each sip builds in intensity, tapering into an extraordinarily long, dry and resonant finish. It’s less a wine, more an experience, an echo of the solera, whispering of time and oak and sea air.
For when: silence is the only fitting accompaniment.
Pairs with: aged cheeses, roasted nuts, or contemplative solitude.
Made from 100% Palomino, this rare Oloroso is drawn from a tiny solera of just nine casks, selected by the late Manuel Lozano, Lustau’s legendary cellar master. Aged for more than three decades in Jerez de la Frontera, it undergoes long oxidative ageing, developing immense concentration, aromatic depth, and textural richness.
Part of Lustau’s elite VORS (Very Old Rare Sherry) collection, certified by the Consejo Regulador as being over 30 years old, this Oloroso stands as one of the greatest expressions of its kind: dry yet layered with warmth, history and grace. Serve lightly chilled at 13–14°C in a fine glass, and take your time, this is a wine to be savoured as slowly as it was made.
