On the palate, it’s impossibly rich and velvety with waves of dried fruit and toffee unfurl with remarkable softness and depth. Despite its intensity, the natural acidity keeps everything balanced, leading to a lingering, treacle-smooth finish that seems to go on forever. Made from 100% Pedro Ximénez, the grapes for San Emilio are hand-harvested and then sun-dried until they become raisins, concentrating their sugars and aromatics. Fermentation begins slowly and is halted to preserve natural sweetness, before the wine spends 12 years ageing oxidatively in the warm cellars of Jerez de la Frontera.
