On the palate, it’s dry yet layered with warmth and depth: intensely nutty, tangy with citrus and spice, and balanced by a fine, refreshing acidity that drives it long into a saline, endlessly persistent finish. Made from 100% Palomino, this Amontillado hails from a solera of just 38 casks ageing within the storied Castle of San Marcos in El Puerto de Santa María, a medieval fortress originally built by Alfonso X of Castile. Here, within thick stone walls and Atlantic breezes, the wine undergoes a long and patient transformation: beginning its life as a Fino under flor before ageing oxidatively for many years, developing extraordinary complexity and structure.

Part of Lustau’s revered Almacenista range, the Amontillado del Castillo honours the Sobrinos de Antonio Caballero, one of the small family cellars entrusted to preserve the region’s most traditional soleras. The result is a wine of striking depth and precision, dry yet generous, saline yet supple: a true jewel of the Sherry Triangle, crafted where time, place and history converge in every amber drop.
