Giuseppe is a recognised \u003c\/span\u003e\u003cem\u003e\u003cspan\u003emaestro oleario\u003c\/span\u003e\u003c\/em\u003e\u003cspan\u003e, or master oil maker, combining traditional regional knowledge with careful modern production.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThe Coratina olives come from century-old trees rooted in the iron-rich soils of the Le Ferre district, around 230 to 290 metres above sea level. Proximity to the Ionian Sea brings cooling breezes to the warm, dry Mediterranean climate.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe olives are processed within 12 hours of harvesting. After washing and crushing, the olive paste is mixed and cold-extracted at temperatures below 27°C.
